INGREDIENTS

For the Dressing:

  • 1/4 cup low sodium soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons honey
  • 2 tablespoons brown rice vinegar
  • 1 to 2 tablespoons lime juice
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons sesame oil
  • 2 cloves garlic, grated
For the Gochujang Sauce:

  • 2 tablespoons gochujang paste, plus more to taste
  • 2 teaspoons sesame oil
  • 1 tablespoon honey
For the Noodle Salad:

  • 1 8 oz box gluten-free rice noodles
  • 2 cups mache rosettes or spring greens mix, plus extra for garnish
  • 1/2 cup red bell peppers, thinly sliced or chopped
  • 1/2 cup yellow bell peppers, thinly sliced or chopped
  • 3/4 cup English cucumber, diced or julienned
  • 3/4 cup carrots, diced or julienned
  • Heaping 3/4 cup shredded red cabbage
  • 1/4 cup scallions, diced
  • Sesame seeds
  • Unsalted roasted peanuts
  • Lime wedges

INSTRUCTIONS
 


  1. In a small to medium-sized bowl, combine all dressing ingredients. Whisk together until well combined. Set aside.
  2. In another small bowl, mix together the gochujang paste, sesame oil, and honey. Taste and adjust seasonings as desired. Set aside.
  3. Cook the rice noodles according to package instructions, typically boiling for about 5 minutes. Drain and set aside.
  4. In a large mixing bowl, combine the cooked rice noodles, vegetables, and prepared dressing. Toss together until everything is evenly coated with the dressing.
  5. For a spicier salad, add the prepared gochujang sauce to the bowl and toss again to combine.
