INGREDIENTS

  • 1 pound skinless and boneless chicken breasts
  • 2 cups white rice
  • 4 cups water
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley or cilantro

INSTRUCTIONS

  1. Rinse the rice in a fine mesh strainer under cold water until the water runs clear. Add the rice and water to a pot, bring to a boil over high heat, then reduce the heat to low and cover the pot. Cook the rice for 18 to 20 minutes, or until soft and the water is absorbed. Keep the rice warm after fluffing it with a fork.
  2. Cut the chicken into bite-sized pieces while the rice is cooking. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for two to three minutes, or until soft and fragrant.
  3. Add the chicken to the skillet and cook until browned on all sides, about 5 to 7 minutes, tossing periodically.
  4. Stir together the cumin, paprika, salt, and pepper in the skillet. Continue cooking for another 2 to 3 minutes, or until the chicken is fully done.
  5. Serve the dish by dividing the rice among four bowls or plates and topping with the chicken. Immediately garnish with parsley or cilantro and serve.
