It's a popular and tasty way to enjoy salmon!Prep: 20 Min | Total: 30 Min | Servings: 4
Ingredients
For the sauce:
- 1/2 cup (1 stick) unsalted butter
- 2-3 tablespoons fresh lemon juice
- 2 tablespoons finely chopped fresh herbs (such as parsley, dill, chives, or a combination)
- Salt and pepper to taste
For the salmon:
- 4 salmon fillets, about 6 ounces each
- Salt and pepper to taste
- Olive oil for brushing the grill
Steps:
- Preheat the Grill: Heat your gas or charcoal grill to medium-high heat.
- Prepare the Sauce: In a small saucepan, combine the finely chopped onions, chicken or vegetable broth, and 3 tablespoons of fresh lemon juice. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium. Allow it to simmer for 5 to 7 minutes until it's reduced to about 2 to 3 tablespoons, stirring occasionally.
- Add Butter: Remove the saucepan from the heat, and gradually stir in the cold butter, one tablespoon at a time, until each tablespoon is well blended. Then, mix in the chopped fresh dill, finely chopped fresh parsley, and 1/8 teaspoon of pepper. Cover the saucepan to keep the sauce warm.
- Prepare the Salmon: In a small bowl, combine the olive oil and 1 tablespoon of fresh lemon juice. Mix well. Brush this mixture over the salmon fillets, and then sprinkle them with salt and 1/4 teaspoon of pepper.
- Grill the Salmon: When the grill is heated, place the salmon fillets, skin side up, on the gas grill over medium heat or on the charcoal grill about 4 to 6 inches from medium coals. Cook the salmon for 8 to 10 minutes or until it flakes easily with a fork, turning once and brushing occasionally with any remaining oil mixture.
- Serve: If needed, reheat the butter sauce over very low heat, stirring constantly. Serve the grilled salmon with the warm lemon-herb butter sauce drizzled over the top. Enjoy your delicious meal!
